Brine the chickens for 2 to 3 hours
Remove from brine and place on icing grids on a sheet pan
Place in Combi smoker and probe one chicken
Smoke with no heat for 30 minutes and leave the chickens to rest for another 30 minutes no heat
Now roast in combi mode at 250F (121C) to 160F (71C) internal temperature.
Remove the cooked chickens and you're ready for service
